Around 75 to 95 percent of the flavour we perceive comes from the aromas that enter our olfactory system and are complemented by the taste on our tongue. For comparison: one drop of essential oil is equivalent to a whole ounce of dried herbs, because dried herbs lose most of their essential oils through irradiation and evaporation, along with up to 90 % of their nutrients and aromatic compounds. Essential oils, on the other hand, preserve the plants' valuable molecules together with their aroma and, when stored correctly, keep for several years.
