Alongside a warm porridge, overnight oats are THE breakfast in our house during the week. Overnight oats are basically nothing other than porridge, with the difference that they soak overnight in the fridge and are eaten cold the next day with yoghurt and various fruits. The big advantage of cold porridge: it has to be prepared the evening before so that the flavour and consistency are just right. That means this delicious breakfast fits into any schedule!

If we're honest, a healthy and balanced breakfast fails for most people because of time! But to prevent cravings throughout the day and to be able to skip overly sweet snacks until lunchtime, a healthy breakfast is enormously important. And that's exactly why I have the solution for you here: overnight oats! With this recipe you can start your day stress-free from now on and still enjoy a healthy breakfast at home or on the go.

The porridge is also easy to take anywhere, so you can have breakfast on the way to the office or on long drives to your holidays without a guilty conscience. When we travel with the family and, for example, drive 8 hours to Tuscany by car, I make delicious overnight oats for all of us the evening before the trip, which are then packed up and eaten on the way.

Ingredients

  • 5 tbsp rolled oats
  • 8 tbsp water
  • 150 g natural yoghurt or yoghurt of your choice
  • 1 drop of vanilla oil or 1/2 tsp vanilla powder
  • Fresh fruit of your choice

Method

  1. The evening before eating, put the oats in a bowl and mix with the water. Leave to soak in the fridge overnight.
  2. The next morning, fold the yoghurt into the oats.
  3. Prepare fresh fruit of your choice and add to the oat and yoghurt mixture.
  4. Decorate the finished overnight oats with toppings as you like.

Notes

The overnight oats can be decorated with cacao nibs, desiccated coconut or nuts. 

The flavour can be varied however you fancy. Refine your daily power package with: 

  • Cocoa powder
  • Blueberry powder
  • Cinnamon oil (alternatively 1 tsp cinnamon) –> toothpick method
  • For a protein-rich breakfast, with protein powder, e.g. vanilla or chocolate 
  • Orange oil, 1 drop (alternatively the zest of an orange)
  • Coconut: coconut milk instead of water
