Parmesan Omelette

A delicious omelette can be enjoyed at any time of day. Whether for a good start to the day or for a light lunch or dinner. A tasty, fluffy omelette always works. The bonus with this recipe: I've added freshly grated Parmesan – pure indulgence.

When we spent a few days last summer in a small, pretty boutique hotel in Piedmont, the owner personally served a fresh omelette every morning. That was her speciality. But it wasn't just the classic version with eggs, salt and pepper. No, this omelette was really something very special. As a secret ingredient she added freshly grated Parmesan.

My family was absolutely thrilled with this breakfast, which is why I immediately had to come up with a similar recipe of my own so that I could make this breakfast at home. And I actually managed it. Ever since that holiday, we quite often have a fluffy Parmesan omelette for breakfast.

Ingredients

  • 3 eggs
  • 1 pinch salt
  • Black pepper
  • 1 toothpick Black pepper oil ((if available))
  • 1 pinch nutmeg (freshly ground)
  • 1 tbsp milk
  • 1 tsp butter
  • 20 gr Parmesan (freshly grated)
  • Salad and vegetables of your choice (for decoration)

Method

  1. Crack the eggs into a mixing bowl and season with 1 pinch of salt, 1 toothpick of pepper oil, a little freshly ground pepper and a pinch of nutmeg. Add 1 tbsp milk and whisk well with a balloon whisk (if you don't have a whisk to hand, you can use a fork instead).
  2. Heat 1 tsp butter in a medium-sized pan over medium heat, then pour in the egg mixture. Swirl the pan to spread everything out evenly.
  3. After about 2 minutes, once the omelette begins to set and firm up, sprinkle ¾ of the grated Parmesan over it.
  4. Using a spatula, carefully loosen the omelette from the base of the pan and fold it in the middle, as if closing a book. Let it cook for about another 1 minute. Now spread the remaining Parmesan over the new surface and fold again, so that in the end you get a quarter of a circle (as you can see in the picture).
  5. Slide the finished omelette onto a plate and serve with a little salad and fresh vegetables as a side.

Notes

The cheese can be adjusted to your own taste as you like. 

If you like, you can also add herbs or finely chopped vegetables to round off the omelette.
