Around 75 to 95 percent of the taste we perceive comes from the aromas that enter our olfactory system and are complemented by the taste on our tongue. Essential oils are pure extracts obtained from plants. Through gentle distillation processes or cold pressing, the pure essences are extracted from parts of the plant such as the flowers, leaves, roots or seeds and collected in liquid, absolutely pure form.
Essential oils can easily replace fresh or dried herbs and spices, as they are 50 to 70 times more concentrated.
For comparison: one drop of essential oil is equivalent to a whole ounce of dried herbs, as dried herbs lose most of their essential oils and up to 90 % of their nutrients and aromatic substances through irradiation and evaporation. Essential oils, on the other hand, preserve the valuable molecules of the plants together with their aroma and can be kept for several years if stored correctly. This makes essential oils an inexpensive and efficient way of ensuring pure flavor in the kitchen.
